Ok, so now it’s time for a real “from scratch” cookie recipe. This is one of my favorites. I came across this one in one of our old farm magazines. Farm wives have to be “savvy” in the kitchen. They have to whip up something delicious in no time flat, keep it hot for hours and it’s still tasty, use up leftovers in genius ways and know exactly where to bury their flopped recipes so no one will ever find them. Not that I would do that……..maybe, I kinda forget. We better move on……I’m still a work in progress. Here’s the awesome cookie recipe.
1 cup butter
3/4 cup brown sugar
1/4 cup white sugar
1 tsp. vanilla
1-3 oz. package instant vanilla pudding
2 1/2 cups flour
1 cup white chocolate chips
1 cup dried cranberries
Mix butter, sugars, vanilla and instant pudding. Then add eggs and flour and mix. Fold in white chocolate chips and cranberries. Drop by teaspoonfuls on greased cookie sheet and bake at 350 degrees for 8-10 minutes.
You might as well go ahead and make a double batch right away. They’re good to have in the freezer for emergency days. Days when you think you’re just about to go over the edge. The last time I baked these I stood at the counter and ate 3 back to back right out of the oven. It was the right thing to do. And they were scrumptious. Gulp down a glass of milk while you’re at it. Michael here, won’t touch them because they don’t look right. Where are the dark chocolate chips and what are those red things? On the other hand, Marshall will devour them. His take is, “I don’t know what you put in these Mom but they are delicious”. The kid eats pretty much anything. No, he’s not choking the “dumb cat”. He’s trying to make it smile for the camera. Now Candace loves these too. We call them “girl cookies” because we kinda claim them as ours. Let the boys find their own treat. Mmmmmmmmm………..they smell soooo rich and buttery and creamy and……….please let me try one. Yea, come on, please……..we give you all that fresh milk. I promise we’ll behave. I won’t kick you anymore. Hey I heard somebody say “cookies”. I’d kinda like to try some too. Bring me about 7-8 of them. I’m a pretty big eater and I like to enjoy my food.
Well, good grief. Don’t eat all of them. I’m gonna go hide my stash before they’re gone…………………..Carol
