I love salads! Any size, shape or form. I’ll eat them for breakfast, lunch or supper. I like salads with all the weird and crazy stuff in them. I don’t think I’ve met a salad I didn’t like.  It’s not unusual for me to get done with my chores in the morning and go in to the house and eat a salad before 9 o’clock in the morning. I’m weird that way. So here’s the first one on the list. 004.jpg                        Crouton Salad

 Romaine lettuce

4-5 pieces bacon, fried crisp ( I love bacon)

1 small red onion sliced thin ( I don’t understand the “red” thing. They look purple to me. )

1/4 lb. colby cheese, cubed (I love cheese, so I add lots)

One bag Texas Toast croutons (any flavor is good)


1/2 cup mayo

1/2 cup sugar

1/4 cup vegetable oil

1/2 tsp. celery seed

1  1/2 tablespoon vinegar

1  tablespoon sour cream

 I always mix up a double batch of dressing. It stores great in the fridge. Don’t add the dressing until right before you’re ready to serve. The salad gets soggy after setting for awhile, so you have to eat the whole bowl right away. Or I just keep the lettuce and dressing separate and mix it up whenever I feel like a salad.

              Strawberry Spinach Salad

1 cup salted cashews ( pecans work too)

4 oz. swiss cheese, cubed ( or any white cheese )

1 small red onion, chopped ( there’s that “red” onion again)

8-10 strawberries, sliced ( blueberries are delicious too)


1/3 cup vinegar

3/4 cup sugar

2 tsp. mustard

1 tsp. onion flakes

1/8 tsp. salt

1 cup vegetable oil

1 tsp. poppy seeds

     Once again, don’t pour the dressing on the salad until ready to serve. Or do the same with this one. Keep lettuce mixture separate from dressing and then eat salad every morning for breakfast. I double this dressing recipe too and store in the fridge. 040.jpg      I made a big batch of each this morning to take to a fellowship meal at church. They always seem to disappear fast. So I’m thinkin I’m not the only salad lover around these here parts. 041.jpg     I get pretty carried away when I’m in the kitchen. There’s food flyin everywhere. I’m always in a hurry. That’s life when you have bovines to take care of. 042.jpg     Why close the cabinet doors when you’re just gonna open them again and again?! That dishwasher is a shin killer! I’ve tripped over that thing so many times. I mutter under my breath and just keep goin. Can’t somebody empty that thing? Unless Earl walks through the kitchen and trips. Then it’s definitely not a good scenario. Oh my! Not good at all!

     Go fix yourself some good salad this week. You don’t have to eat them for breakfast, only “mad cow” people do weird things like that. So long………………Carol
