I decided it’s high time for another round of recipes. Tonight we had breakfast for supper. Does anyone else do that? I had a “hankerin” for some pancakes. Earl wanted some fried hashbrowns. The bacon was delicious and the   scrambled eggs topped it all off. 019.jpg     The only problem with pancakes………I wish I could eat more of them. Here’s the tried and true recipe for these babies.

1 cup flour

1 tsp. sugar

1/2 tsp. salt

3/4 tsp. baking powder

1/2 tsp. baking soda

1 egg, beat until light

Add:

1 cup buttermilk

2 tablespoon butter

Combine dry and liquid ingredients with a few swift strokes. Don’t over mix. Pour batter by small amounts onto hot griddle. Yields about 5 medium-size pancakes. I definitely double this recipe. Always. Every time.

     I never, ever make pancakes out of a box. That is such a terrible thing to do. Ha ha ha  And these pancakes have to be served with huge chunks of butter and lots of syrup. There is no other way, man! 022.jpg     The hashbrowns have to be crispy. Fry them in lots of butter. Those are the rules and they may not be broken. 016.jpg      Eat the bacon as soon as it’s done. It’s best that way you know. The family walks through the kitchen and grabs a couple of pieces as they go. Then when it’s time to sit down and eat, “where’s the bacon”? 021.jpg     Last but not least. The eggs. Where are the eggs? All I see is cheese. They gotta be there somewhere. I have plenty of eggs. The chickens are workin overtime. I also have lots of green onions from my garden. So I’m putting green onions into everything. Scary! Cheese! You can never go wrong with cheese. 026.jpg     I think this looks like a very good idea. The kid is eating cookies and cream but I’m going to have Mint Chocolate Chip. Oh man, I love that stuff. I might skip the cone and just grab a spoon and the whole tub of icecream. Plop on the couch and “binge watch” some Property Brothers. That’s what I call “livin”……………………Carol
