It’s time for some more recipes. I needed something delicious to go with my coffee and the kids needed something for their breakfast before school. I’m always in the barn milking the bovines, so they are on their own. I pulled two recipes out of my brain but couldn’t decide which one I wanted , so I made both of them. 020.jpg     Hmmmmm…….decisions, decisions. I’ve been making both of these for years and their both quite tasty. I’ll take a big ole piece of each one. Here’s the first one…….

     Chocolate Chip Pumpkin Bread

3 cups flour

2 tsp. ground cinnamon

1 tsp. salt

1 tsp. baking soda

4 eggs

2 cups sugar

2 cups canned pumpkin

1 1/4 cups vegetable oil

1 1/2 cups semi sweet chocolate chips

     In a large bowl, combine flour, cinnamon, salt and baking soda. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.

     Pour into two greased 8 in. x 4 in. x 2 in. loaf pans. Bake at 350 degrees for 60 – 70 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans. 018.jpg

     Lemon Blueberry Bread

1 cup fresh or frozen blueberries

1 1/2 cups plus 2 tablespoons flour

1/3 cup butter, melted

1 cup granulated sugar

3 tablespoons fresh lemon juice

2 large eggs

1 teaspoon baking powder

1 teaspoon salt

1/2 cup milk

2 tablespoons grated lemon zest

1/2 cup chopped pecans


2 tablespoon fresh lemon juice

1/4 cup confectioners sugar

     In a medium bowl, toss the blueberries in 2 tablespoons flour and set aside. Beat together the butter, sugar, 3 tablespoons lemon juice and eggs. Stir together 1 1/2 cups flour, baking powder and salt. Add flour and milk alternately to the butter mixture, beginning and ending with flour. Fold in lemon zest, pecans and blueberries. Pour batter into a greased 4 x 8 x 2 inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes or until a toothpick comes out clean. Cool for 10 minutes.

     Mix together the glaze ingredients and drizzle over the top while still warm. Delicious!!
