When I was still just a “shrimp”, Strawberry Shortcake was all the rage. I’m not talking about food but the little strawberry girl that was on all the notebooks, folders and school supplies. Oh, we thought she was so cute and we had all the “stuff”. I’m not sure if she still exists. Seems to me she kind of made a comeback but I’m not sure. Here’s the strawberry shortcake I want to talk about today. This is what Mom always made for us when we were growing up. 040.jpg     That looks good enough to eat. Trust me, I’ve been eating my fair share. Here’s the recipe…………

             SHORTCAKE

2 eggs

1 1/3 cup granulated sugar

3 cup flour

1 cup milk

1 teaspoon baking soda

1 teaspoon baking powder

3/4 cup butter, softened

Mix together in order given. Bake at 350 degrees for 30-35 minutes in greased and floured pan. Makes one 9×13 or two 9 in. layers. Easy to make ahead and freeze.

We’re eating it like it’s going out of style. 009.jpg     Have plenty of fresh strawberries on hand to devour. 042.jpg     Make sure you have plenty of the magic ingredient to pile on top. When no one is looking, squirt some in your mouth. Nobody ever needs to know. I like things that are made with REAL cream. 036.jpg     Marshall thought it was pretty tasty. He had some for a bedtime snack. Looks like a pretty good sized pile there. Chow down, son. I ate some for a pre-breakfast snack and then again after breakfast.
