I love asparagus. I have a pretty decent sized patch out by my garden. It produces enough for us to eat fresh every spring. Here’s half of the patch. I have it in two different places. The patch also grows daylilies, some flower plant I don’t know what it’s called and plenty of weeds. Every year I tell myself I’m going to clean it out and do something about that big mess. Every year I keep putting it off. Maybe some day. Fresh off the press. I like to eat some raw while I’m picking. Weird, I know but just try it sometime. Here’s the awesome recipe.
2 lbs. fresh asparagus
12 slices bacon (Yum!)
1/2 cup light brown sugar
1 stick butter ( Yes, I love that butter )
1 tablespoon soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon ground pepper
Preheat oven to 400 degrees.
Divide asparagus into 12 bundles. Carefully wrap 1 piece of bacon around each bundle. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer to the oven and roast for 25 minutes, or until the bacon looks fully cooked. Best if served right away. The sauce is like magic! It’s the secret ingredient.
This is the only way I can get my picky boys to eat asparagus. On the other hand, They’re pretty satisfied with a huge bowl of cereal. Oh well, I’ll gladly eat their fair share………………….Carol
