First, let me just say that I was warned not to be a “recipe junkie” on my blog. So, I’m trying to be careful, but sometimes I need to talk about food. Every time I post a recipe I have a watchful eye over my shoulder. It’s not that I’m scared…….I just don’t want to be caught off guard. You decide who the guilty ones are for saying that. Now, I’m pretty sure I can put up a good fight. I haven’t been milking cows for “nuthin” all these years. I’m going to go ahead and post my “Monday” recipe and watch my back.
It’s all about soup in the cold months. We have had a few cold days, but not very many……thank goodness. I couldn’t help myself and have made a few batches here and there. Today is Southwestern Soup. This is one of Marshall’s favorite. Michael won’t touch it with a ten foot pole. So here goes………. 1 lb. ground beef
1 cup chopped onion
2 garlic cloves, minced
2 (16 oz.) cans light red kidney beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 (14.5 0z.) can petite diced tomatoes and jalapenos, undrained
1 (14.5 oz.) can diced tomatoes and mild green chilies, undrained
1 (14 oz.) can beef broth
2 cups frozen whole kernel corn
1 (1 oz.) envelope taco seasoning mix
1/4 tsp. salt
1/4 tsp. pepper
2 Tbsp.chopped fresh cilantro
Toppings: sour cream and fresh cilantro
Brown beef, onion, and garlic in large pot over medium-high heat until meat is no longer pink and onion is softened; drain.
Stir in kidney beans, next 8 ingredients, and 4 cups water. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer 30 minutes or until thoroughly heated. Stir in cilantro just before serving. And don’t forget the most important topping……sour cream.
This hits the spot on a cold day. Yep….Marshall is my “bean soup” man! Just plop a bowl of this soup in front of him and he will devour. You must have sour cream though……he can’t eat it without. Farmers can clean up when the need arises. Doesn’t he look sharp? I must move on…….before I get caught posting a recipe…………………Carol
