Well, today is Saturday and that means……football and pizza!! Saturday night is always pizza night around these here parts. Homemade pizza! Football…….it’s a disease within the ranks. We may have to record the games, but they will be watched later on that evening…..while chowing down on pizza. There’s always lots of “commentary” in the house. Football is a “yelling at the T.V.” kind of game around here. Isn’t life great?! Isn’t football awesome?! I really don’t know all that much about it…….but if it makes the family happy…..I’m happy. Homemade Pizza Dough………………..
2 cups warm water (100-110 degrees)
2 tsp. yeast
2 tsp. sugar
1 Tbsp. kosher salt
6 cups all-purpose flour
1/2 cup olive oil
plain yellow cornmeal
Stir together first three ingredients in a small bowl. Let stand five minutes.
Stir together salt and flour in large bowl. Pour in yeast mixture and 1/2 cup olive oil, and stir to form a soft dough. Knead until you have a beautiful, not too sticky dough. Maybe 5 minutes or so. I let the mixer do all the work for me.
Place in a well greased bowl. Turning to grease the top. Cover and let rise for 1 1/2 to 2 hours. I always mix mine up before I head out the door to do the evening milking. Sometimes it’s rising for at least 3 hours or so. That’s totally fine……the longer it rises the better it is. Now, if you don’t have cows to milk while it rises…………it may not be as good. Just sayin’…………Hahaha
Divide the dough in half and press onto your pizza pan with your fingers. Add whatever toppings that inspire you. I bake mine at 450-475 degrees for about 10-15 minutes. Just until the crust is starting to turn golden. Watch it closely……you don’t want “burnt” pizza! Two beautiful pizzas! I make one supreme and the other meat lovers. The boys always want meat lovers. They don’t like weird toppings. The supreme is made with ranch dressing instead of tomato sauce. And not ranch out of a bottle, either. That has a “twang” to it. Mix it up with the little packets. So much better. So there you have it. Pizza! Pizza! Leftovers are always eaten on Sunday morning. Those are the rules. Oh, I almost forgot……never use pre-shredded cheese. That is a crime. Naughty. Naughty. Ya gotta use fresh! And one more thing. You are more than welcome to come eat pizza with us. There’s only one catch……..you don’t eat unless you first help milk the cows. Not just one cow either……the whole stinkin’ herd! Yep, that’s right. Work before play! And then you also have to help feed all those baby calves. There’s a bunch of them too. Oh, I almost forgot the chickens…….feed and water them, and gather the eggs.
I am not expecting any company for supper tonight! Which is “ok”. That leaves more pizza for me. And I can eat my fair share……………………..Carol
