Here is my next “soup of the week” recipe. I’m going from “wicked” soup to “comforting” soup in a matter of days. From one extreme to another. This soup will soothe your heart and soul. It will lift your spirits on a cold and depressing day. Eat a bowl full of this goodness and it’ll put you out like a light. Ok, ok……maybe I’m exaggerating a bit, but hey, just try it. You might find a new best friend. I think it’s called “BFF” in this day and age. Most of my BFF’s are black and white. Hahaha050      Here is the “star” of the show. What can make your life better than a bowl of soup with lots of bacon piled on top?!

4 lg. baked potato

2/3 cup butter

2/3 cup flour

3/4 tsp. salt ( I added more after it was all mixed up)

1/4 tsp. pepper

6 cup milk ( of course, I always use whole milk…..there is no other way. I also added more milk when all was said and done. Makes it more “soupy”.)

1 cup sour cream

1/4 cup sliced green onion

5 slabs bacon ( I love bacon, so I added more )

1/2 cup shredded Colby / Cheddar cheese ( I always use Colby….and I use more than 1/2 cup )

Bake potatoes for 55-75 minutes. Peel and mash with a fork. Melt butter in a large saucepan over medium heat. Add flour, salt,  pepper, and stir until smooth. Gradually add milk. Bring to a boil, cook and stir until thickened. Remove from heat. Stir in sour cream, potatoes and onion. Add bacon and cheese last.  049.jpg      I always like to pepper my bacon while I fry it. I know it sounds weird, but I got started on peppered bacon way back……when I was still a young “whipper snapper”. Some things you just can’t shake off. 047.jpg      Here we have all that blessed cheese. I just shred a nice little pile and throw it in. I don’t measure. I go by looks on this one. Remember, I never use pre shredded cheese. It’s one of my many hang ups. Yep, there you have it. Always awesome! Always delicious! Hmmm…….I think that’s what I’m having for supper tonight.
