I finally decided on my soup of the week. Chili. Nothing fancy. Nothing spicy, wicked or evil. Just plain ole chili.  This recipe actually originates from my other favorite Aunt…..Martha. Funny, it seems like every Aunt I have is a favorite. Hahaha Well, I’ve been making this chili for years and years. It’s simple, easy, and delicious.050         Here’s the recipe…….

1 1/2 lb. hamburger

1/2 onion chopped

2 tsp. chili powder

1/2 tsp. salt

plenty of black pepper

 Brown the above ingredients together…….once the hamburger is no longer pink, add 1/2 cup flour. Give it a good stir….allow to brown just a tad, then add……..

2 cups water

1 1/2 cups ketchup

4 cup tomato juice

     Bring to a boil and add 1 can of beans. I like chili beans, but kidney, black, pinto, etc….. are all delicious. You can also add a can of diced tomatoes with green chilies if your heart so desires. 051.jpg     This may sound strange, but I love cheese and pickles with my chili. Any kind of cheese. Except for pre-shredded, of course. We had worked outside all morning…..skipped breakfast, and were hungry as a horse. So, I cubed a bunch of cheese and rustled up a batch of chili, and we were set to go. Oh, yea…….I got a “wild hare” to make a batch of corn bread.056.jpg     I thought it was fantastic with the soup, but when I asked Earl how he liked it he said…”Ok”. Now let me just say…..I can read between the lines. I also know what the “dude” is going to say before he even says anything at all. And I have eyes in the back of my head. Yep, must come from working together 24/7 for 23 years. So, here is the interpretation……You don’t need to make it again…..in fact, never make it again!! Just chili, cheese, and crackers! Later, he informed me that I wasted perfectly good cornmeal on that cornbread. So……you see, I hit the nail on the head on that one. If she would come visit me once in awhile, I could update my photo album. Hahaha Anyway, the chili recipe comes from her recipe box. Hmmm……wonder if she even makes it anymore? Either way, we love it and Marshall is a big fan. Give it a try on the next cold, dark, and stormy night……………………………..Carol
