Today I’m going to talk “healthy eating” talk. As you all know….I’m the expert on that. With my chocolate addiction, Dr. Pepper weakness, my eye opener drink….iced coffee, and all the other hidden truths that will go to the grave with me. We’re nearing the end of January. Everyone is fired up about their resolutions except for me. I’m still celebrating Christmas. Yes, my decorations are still up. The rebellion is heavy around here. I’m thinkin’ maybe Super Bowl Sunday should be my deadline. And then the dust will start to fly! So for all you strong and pro-active folks out there, I’m going to share my favorite salad with you.002.jpg      Check this out! Absolutely divine! Notice I pile on extra cashews, strawberries, and cheese. There’s some green in there some where. I have actually posted this recipe before…..about a year ago. Oh well….is it “OK” to do it again? I have another favorite that I haven’t posted, so I’ll make sure to do that next time. Sorry, I’ll try not to let it happen again…….

1 bunch spinach ( some folks like romaine )

1 cup salted cashews

4 oz. swiss cheese, cubed ( some like it shredded, and I don’t measure the cheese….I go by looks )

1 small red or purple ( looks purple to me ) onion

8 – 10 strawberries, sliced


1/3 cup vinegar

3/4 cup sugar

2 tsp. mustard

1 tsp. onion flakes

1/8 tsp. salt

1 cup vegetable oil

1 tsp. poppy seeds

      Now, when you mix this up…’s very important to not put the dressing on the salad until right before you’re ready to serve. The leftovers get soggy, so you’ll have to eat the whole bowl right away. 026     I got this recipe from my Mom, but it actually originated from my favorite Aunt, Darlene. (calm down all my other Aunts out there) Haha So, I’m thinkin’ that she probably has a bunch of other delicious recipes that I need to have. Darlene, if you’re reading this post…..come visit me this summer, and be sure to bring your recipe box with you. I need a fresh arsenal of meals to throw in front of my carnivores. 021.jpg     Yep….it sure is a beautiful day to eat a salad. Along with a juicy hamburger, and a cold Dr. Pepper to burn it all up. Top it off with some chocolate for dessert. Now that’s a well rounded meal! And as far as the chocolate is concerned…….you might have to hide some in the cupboards somewhere. “Farm boys” can sniff things out like that. Not that I would do that……just a suggestion…………………..Carol
